the gator tator burger

This burger idea came to me as I was talking about my love of all things potatoes. Fries, mashed potato, hash browns, and TATOR TOTS! My love for tator tots began at an early age, and hasn't diminished since. So why not put it in a burger?  Homemade is definitely the way to go, the tots were so crispy and went so well with the homemade aioli. I'll stop talking now, and let you get to it! Hope you enjoy this as much as I did!

Tator Tots:

Potatoes (I used 2 for my burger and few extras)

Oregano

Salt

Pepper

1. Put peeled potatoes in a pot, cover with cold water and cook over medium heat- remove just before it boils

2. Drain, let dry, and finely grate with cheese grater

3. Add potato, oregano, salt and pepper to large bowl and mix

4. Form mixture into Tator tot shapes and shallow fry to golden brown

Aioli:

Three handfuls of cashews soaked for 4 hours

2 tsps apple cider vinegar

2 tsps olive oil

2 tsps Dijon mustard

4 smashed garlic cloves

Less than a cup of coconut water (use your judgement)

Salt & Pepper to taste

Put all ingredients into a blender or food processor. Blend till creamy, but not too runny.

Then enjoy building your gator tator! Start with the bottom bun, and add; lettuce, tomato, avocado, and whatever else you fancy - in whatever order you fancy!
