INGREDIENTS:

BASE:

1/2 Cup Almonds (I activate them by soaking in water overnight)

1/4 Cup Pitted Dates

1 Teaspoon coconut oil

Pinch of Stevia

COMBINE ALL INGREDIENTS IN FOOD PROCESSOR/BLENDER. BLEND FOR 10 SECONDS (NOT TOO FINE). USE YOUR FINGERS TO PRESS THE BASE INTO THE BOTTOM OF THE MUFFIN TRAY. STORE IN FREEZER WHILE YOU MAKE THE FILLING.

FILLING:

2 Cups Cashews (soaked in water overnight, or for minimum 6 hours)

1/4 Cup Stevia

1/3 Cup Almond Milk

2 Teaspoons Vanilla Extract

3 Tablespoons Coconut Oil

1-2 Handfuls Mixed Frozen Berries

1 Teaspoon Acai Powder (optional)

BLEND ALL INGREDIENTS IN FOOD PROCESSOR/BLENDER UNTIL CREAMY. TASTE FOR SWEETNESS AND ADD ANOTHER PINCH OF STEVIA IF NECESSARY. POUR ON TOP OF BASES IN MUFFIN TRAY AND RETURN TO FREEZER FOR AT LEAST 3 HOURS. ENJOY!
