CASHEW BASIL PESTO

Ingredients:

1 Cup Cashews, soaked for two hours

Large handful of fresh Basil, rinsed, not dried 

3 Cloves of Garlic, crushed

2 Tablespoons olive oil

Juice of 1/2 a lemon

1/4 Cup Water

Salt to Taste

Combine all ingredients in food processor. Blend until creamy. Taste and and salt or lemon accordingly. Viola! Mix through pasta and enjoy!
